Veggie Patties

Ingredients

What you need:

  • Mushrooms

  • Kale

  • Carrots

  • Brown Rice

  • Rice Flour

  • Egg

  • Beans - optional

  • Seasoning: Salt, pepper, cayenne, onion powder, garlic powder, cajun seasoning

Instructions:

  1. In a food processor, chop carrots, kale, and mushrooms.

  2. Sauté the veggies with olive oil. Add seasonings.

  3. Let the veggies cool.

  4. Add cooked brown rice, rice flour, and egg. Fold together.

  5. You will get firmer patties if you chill the mixture in the frig for at least an hour.

  6. Form round patties and sear. You should see a crust starting to form. Flip to the other side.

  7. Serve on a bun, with a fried egg, or by itself.
