Mini Baby Dutch Pancakes

Ingredients

What you need:

  • Flour (1 cup)

  • Granulated Sugar (1/4 cup)

  • Powdered Sugar (1/4 cup)

  • Butter (2 tablespoons)

  • Whole Milk (1 cup) - You can use non-dairy milk but the result will be a different texture. More dense and less light and pillowy.

  • Butter (enough to coat)

  • 3 large Eggs

  • Vanilla (a splash)

  • Cinnamon

  • Cast iron, baking dish or muffin pan

  • Blender

Instructions:

  1. Preheat your oven at 425°.

  2. Place your empty baking dish in the oven. Heat for at least 20 minutes.

  3. In the blender, add milk, eggs, granulated sugar, flour, vanilla, and cinnamon. Blend until smooth.

  4. Pull out the hot baking dish and coat with butter.

  5. Carefully, pour the batter into the hot baking dish.

  6. Place back into the oven and bake for 15-20 minutes.

  7. Let cool for 5 minutes.

  8. Serve with jam or fresh fruit
