Veggie Stew
Ingredients
What you need:
2-3 fresh Tomatoes
Fennel
Kale
Giant White Corn
Garlic
Jalepeños
1 Can of Crushed Tomatoes
Veggie Broth
Seasonings: Crushed peppers, Cayenne, Salt, and Pepper
Instructions:
Soak the giant white corn in cold water for 24 hours.
Chop all the veggies and garlic.
Add olive oil, garlic, and jalepeños to a large pot. Cook for 5-10 minutes.
Add carrots, fresh tomatoes, and fennel.
Season well and stir.
Add corn.
Pour in crushed tomatoes and broth.
Season to taste.
Cook on low for 2-3 hours. Stir frequently.
Add kale before serving.
