Veggie Stew

Ingredients

What you need:

  • 2-3 fresh Tomatoes

  • Fennel

  • Kale

  • Giant White Corn

  • Garlic

  • Jalepeños

  • 1 Can of Crushed Tomatoes

  • Veggie Broth

  • Seasonings: Crushed peppers, Cayenne, Salt, and Pepper

Instructions:

  1. Soak the giant white corn in cold water for 24 hours.

  2. Chop all the veggies and garlic.

  3. Add olive oil, garlic, and jalepeños to a large pot. Cook for 5-10 minutes.

  4. Add carrots, fresh tomatoes, and fennel.

  5. Season well and stir.

  6. Add corn.

  7. Pour in crushed tomatoes and broth.

  8. Season to taste.

  9. Cook on low for 2-3 hours. Stir frequently.

  10. Add kale before serving.
