Salmon Cakes

Ingredients

What you need for the Salmon Cakes:

  • 1 can of salmon

  • 1 rice cake

  • 1 egg

  • 1 tablespoon of Greek yogurt

  • 1/2 onion

  • 1/2 green pepper

  • Season salt (My favorite is Hold It Down by Sabrina Ransom)

  • Cayenne Pepper

  • 2 tablespoons of vegetable oil

  • Cast Iron or Non-stick pan

What you need for the Aioli :

  • 2 tablespoons of mayonnaise

  • 1 sprinkle of Old Bay

  • 2 dashes of hot sauce

  • 1 squeeze of fresh lemon

  • 1 dash of garlic powder

  • Combine ingredients in a small bowl and mix together until smooth.

Instructions:

  1. Use a food processor to blend the rice cake.

  2. Combine all ingredients in a bowl and fold them together.

  3. Make patties with the mixture

  4. Add vegetable oil to your pan and add your patties to the hot pan. Sear on both sides. This should create a beautiful crust.
