Eggplant Parm

Ingredients

What you need:

  • 1 Eggplant

  • Ground Parmesan Cheese

  • Mozzarella Cheese

  • Tomato Sauce

  • 1 egg

  • Salt

  • Basil

  • Seasonings: Italian seasoning

Instructions:

  1. Cut the eggplant in about 1/2 inch slices

  2. Place them on a flat surface and salt gently. Cover with a paper towel. Let sit for 30 minutes. This pulls out all of the moisture.

  3. Beat 1 egg and season with salt.

  4. Dip eggplant slices in the egg and then the parmesan cheese.

  5. Air fry the slices for about 10 minutes

  6. Remove the rack of slices and spoon tomato sauce on each slice. Add generous amounts of parmesan cheese. Air fry for another 3-5 minutes until cheese is melted.

  7. Remove the eggplant and top with Italian seasoning and basil.
