Savory Oatmeal
Ingredients
What you need:
1 cup Quick Cooking Oatmeal
1 cup Broth
1 cup Water
Cherry Tomatoes
Mushrooms
Olive Oil
Head of Garlic
1 Egg
Instructions:
Tomato Confit
Add cherry tomatoes to a baking dish with garlic and herbs.
Douse with a generous amount of olive oil.
Bake at 200° until the tomatoes are a little wrinkled.
When cool, store the tomato confit in a container and refrigerate.
In a hot frying pan with olive oil, add mushrooms. Sear on both sides.
Add 1/2 cup of broth and 1/2 cup of water to a pot. Bring to a boil and turn down the heat.
Slowly drop an egg into the pot. Cook for 3-4 minutes and remove the poached egg with a slotted spoon.
In that same pot, stir in oatmeal.
Cook until it reaches your desired consistency.
Top with tomato confit, mushrooms, and the egg.
