Green Pasta Salad

Ingredients

What you need:

  • Pasta

  • Spinach

  • Tomatoes

  • Cucumbers

  • Olive Oil

  • Salt & Pepper

  • Lime Juice

  • Mozzarella (optional)

Instructions:

  1. In a food processor, add spinach, olive oil, lime juice, salt & pepper. Pulse until smooth.

  2. Chop cucumbers and tomatoes.

  3. Boil pasta until al dente.

  4. In a bowl add the pasta, spinach, tomatoes, and spinach puree.

  5. Add mozzarella.

  6. Mix until the pasta is coated evenly. Add salt & pepper to taste.
