Shrimp Scampi Bucatini

Inspired by Pinot, Pasta & Parties Cookbook by Paul & Dee Dee Sorvino

Ingredients

What you need:

  • Shrimp with shells

  • Butter

  • Olive Oil

  • Dry White Wine

  • Salt

  • Red chili flakes

  • Garlic

  • Bucatini (Any other pasta will also work)

Instructions:

  1. Remove shells from shrimp.

  2. Fill a large pot with water. Add a good amount of salt. Put the shells in a cheesecloth or strainer and add them to the boiling water. Boil for at least 30 minutes.

  3. In a medium-sized pan, add butter and olive oil, and garlic. Cook for 1 minute.

  4. Add white wine.

  5. Season with salt and chili flakes.

  6. Add shrimp. Cook for a minute or 2 on each side.

  7. Remove shrimp from the pan and set aside.

  8. Remove the shrimp shells from the water, which should now be a shrimp stock.

  9. Add the bucatini. Cook until al dente.

  10. Remove the bucatini from the stock and add it to the butter mixture.

  11. Serve pasta with shrimp. Garnish with herbs and more chili flakes.
