Crispy Mashed Beets

Inspired by Everyone’s Table Cookbook by Gregory Gourdet

Ingredients

What you need:

  • Beets

  • Red Chilis (recipe called for fresh, I used chile flakes)

  • Scallions

  • Salt

  • Garlic

  • Sea Salt

  • Olive Oil

Instructions:

  1. Preheat the oven to 425°

  2. In a bowl, combine olive oil, garlic, and chiles. Coat the beets in the mixture.

  3. Roast the beets for 45 min - 1 hour.

  4. Let the beets cool for about 15 minutes.

  5. Line a cutting board with parchment paper.

  6. Remove the beets from the baking dish and place them on the cutting board.

  7. With a small plate, smash the beets. Use enough pressure to split the skin but the beet should still be intact.

  8. In a frying pan, add olive oil and more chiles.

  9. Add the beets to the frying pan and sear on both sides.

  10. Plate with scallions, garlic, and chiles.
