Carrot Ginger Soup
Ingredients
What you need:
3-5 Carrots
Ginger
1 Onion
Garlic
Broth
Thyme
Salt, pepper
Instructions:
Wash and peel the carrots, onion, and ginger.
Cut the carrots and onion into chunks.
In a pot, add olive oil and brown the carrots and onion.
Use a Microplane to grate the ginger and garlic. Add both to the pot.
Add salt, pepper, thyme, and any other herbs you like.
Cover with broth. Cook for 20-30 minutes.
If you have an immersion blender, use it to blend the ingredients. An alternative is to transfer all the contents to the blender. Remove the veggies and slowly add the broth. It will be very hot. Blend until smooth.
Serve hot with drips of cream and topped herbs.
