Texas Lamb Tacos

Ingredients

What you need:

  • Lamb (Shoulder or chop)

  • Corn tortillas

  • Broth (enough to cover the lamb)

  • Red wine - 1 cup

  • Brewed coffee - 1/2 cup

  • Taco Seasoning: Salt, pepper, smoked paprika, cumin, chili powder, onion powder, garlic powder

Instructions:

  1. Use the taco seasoning to flavor the lamb.

  2. Cook the mushrooms for about 5 minutes.

  3. Brown the lamb on both sides.

  4. Add broth, red wine, and coffee.

  5. Cook for 40 min - 1 hour

  6. Char the corn tortillas. Place 1 tortilla on your gas burner. Turn on the flame. Remove with tongs when you see your desired char.

  7. Build the taco of your choice. I used avocado, tomatoes, and cilantro.
