Chicken Tortilla Soup

Ingredients

  • Chicken

  • Hot Chicken Broth 

  • Peppers (I used green, yellow, red & jalapeno)

  • Onion 

  • Tomato Paste or Canned Tomatoes 

  • Black Beans 

  • Corn

  • Heavy Cream

  • Seasoning: Salt, Pepper, Chili Powder, Paprika, Onion Powder, Garlic Powder

Instructions:

  1. In a pot, add half of the peppers, and onions. Season. 

  2. Add tomato paste or tomatoes and cook for 10 minutes. Season. 

  3. Slowly add chicken broth and cook for 10 minutes 

  4. Emulsify the ingredients.  

  5. Add heavy cream and the remaining peppers, onions, chicken, and black beans. Season.

  6. Season to taste and let cook for 10-15 minutes 

  7. Serve hot and top with avocado, cilantro, and tortilla chips/strips.
