Italian Wedding Soup
Ingredients
Turkey Meatballs:
Ground Turkey
Bread Crumbs 1/4 cup soaked in 1/4 milk
Parmesan Cheese
Hot Chili Peppers
Salt & Pepper
The Soup:
Chicken Broth
Carrots
Onion
Garlic
Kale
Farro
Instructions:
Make the meatballs by adding the ingredients to a large bowl. Mix well.
Form meatballs to your desired size and set aside.
In a cast iron skillet, add olive oil and sear the meatballs on both sides.
Bake the meatballs for another 10-15 minutes.
In a pot, add olive oil, onion, garlic, and carrots. Season with salt and pepper.
Cook for about 10 minutes.
Add the farro.
Slowly add the chicken broth.
Add the kale
Remove the meatballs from the oven and add them to the broth.
Cook for about 15-20 minutes.
