Chipotle Bowl & Sparkling Shiraz

Boneless Chicken Thighs
Black Beans
Corn
Rice
Cilantro
Salsa
Sour Cream
Avocado or Guacamole
Adobo Sauce
Dried Chipotle Peppers
Brown Sugar
Chili Powder
Cumin
Smoked Paprika
Salt & pepper
Tomato Paste or 2 Roma Tomatoes
Homemade Salsa (optional) - Chop or blend ingredients together

Yellow Onion
Jalapenos
Lime Juice
Salt & pepper
Garlic
Cilantro
Homemade Guacamole (optional) - Chop and fold ingredients together.
Avocados

Instructions:
Rehydrate the chipotle peppers by soaking them in hot water for at least 15 minutes. Remove the peppers from the water and cut to remove the seeds.
In a blender or food processor, add peppers and all the listed ingredients. Pour 1.5 cups of hot water in the blender and blend until smooth.
Pour the adobo sauce over the chicken thighs and marinate for at least 4 hours.
Heat a frying pan and add olive oil. Cook the thighs on high heat to get a nice char. This should take 10 minutes on each side.
Add plenty of cilantro to the rice and beans.
