Duck Pot Pie & Philosophy Reign
Ingredients
What you need:
Whole Duck
Diced Carrots
Diced Celery
Diced Onions
Pie Crust or Puff Pastry
Instructions:
Salt a whole duck and let dry for 20-30 minutes. Rub the duck with olive oil and roast for 1.5 hours at 300.
Add the duck to a pot with water, one onion, carrots, and celery. Salt to taste. Cook for 1.5 hours.
Remove the duck from the pot and the meat should easily separate from the bones. Scoop out the bones and cooked veggies. Only the broth should be left.
In a pan, add diced, carrots, celery and onions. Season. Cook for 10 minutes. Add butter and flour. Cook for another 5 minutes.
With a ladle, slowly add duck broth from the pot to the pan. Season and taste. Cook until the filling is your desired thickness. Taste and add more seasoning if needed.
In a baking dish, add the filling. Let cool and top with puff pastry or pie crust.
Brush with butter and bake for 10 minutes at 400.
