Paper Bag Fried Chicken

Ingredients

What you need:

  • Chicken - Any part

  • Flour

  • Buttermilk

  • Large Paper Bag

  • Vegetable or Canola Oil

  • Seasonings: Season Salt, Garlic Powder, Onion Powder, Cayenne, Paprika

Instructions:

  1. Clean the chicken with lemon juice or fresh lemons. Simply rub the lemon all over the chicken and rinse thoroughly.

  2. Combine all of the seasonings in a bowl. Make sure there is enough to season the chicken and flour.

  3. Season the chicken. Be sure to massage the seasoning in each piece.

  4. In a large bowl, add all of the seasoned chicken and add buttermilk until it covers the chicken. Cover and refrigerate for 2 hours or more.

  5. When you are ready to fry, remove the chicken from the buttermilk and play on a drying rack for at least 30 minutes.

  6. Add oil to a dutch oven or cast iron pan. The oil should be heated to 325-350°.

  7. For the batter, add 2 cups of flour and seasonings to a large paper bag. Fold the top and shake well.

  8. Add the chicken to the paper bag and shake well.

  9. Slowly add the chicken to the hot oil. Sections of the chicken have different cooking times. Fry for 15-20 minutes.

  10. Let rest for 10 minutes.
