Lamb Meatball Sub & Napa Cab
Ingredients
What you need:
Ground Lamb
Breadbreads
Chopped Onion
Chopped Peppers
Mint
Egg
Feta
Greek Yogurt
Mozzarella
Store-bought tomato sauce
Hoagie Rolls
Seasonings: Cumin, paprika, onion powder, garlic powder, salt, cayenne pepper
Optional: Spinach Pesto - Blend spinach, walnuts, parmesan, lemon juice, salt and pepper.
Instructions:
Sauté chopped onion and season with all seasonings.
In a large bowl, add cooked peppers/onions, ground lamb, breadcrumbs, mint, feta, greek yogurt, and 1 egg.
Add all seasonings to the bowl.
Massage together
Make golf ball sized meatballs.
Sear the meatballs in a large frying pan for about 10 minutes on both sides.
Season the tomato sauce with all of the same seasonings. Add a little cayenne pepper. Cook for at least 15 minutes.
Dip the meatballs in the sauce and them to a toasted hoagie roll.
Top with mozzarella cheese and pesto. Broil to melt the cheese.
Garnish with mint.
