What you need:
Eggplant $1.52
Zucchini $1.59
Mushrooms $1.49
Pasta Sauce $1.39
Onions $2.15
Garlic $1.19
Sliced Muenster $1.79
Sliced Mozzarella $1.79
Seasonings: Italian Seasoning, Paprika, Parmesan, Salt, Pepper, Nutmeg.
Optional: Carrots and peppers for sauce
Optional: Greek Yogurt and Parmesan blend.
Instructions:
Chop onions, garlic carrots, and peppers. Add to a pan with olive oil. Cook for about 10 minutes.
Add pasta sauce to the pan. Season with Cook for 20 minutes on low.
Thinly sliced eggplant, zucchini and mushrooms.
Salt the eggplant and cover the slices with paper towels to pull out moisture.
Cook mushrooms in a separate pan with salt and pepper for about 10 minutes.
Layer the ingredients in this order

Muenster cheese
zucchini
Greek yogurt Parmesan mixture
mozzarella cheese
sauce
mushrooms
Bake at 350 for 15 minutes.
Serve hot with a spread of pesto.
