Paella Chicken & Rice
Ingredients
What you need:
Chicken (any size or style)
Rice - arborio rice or short brown rice
Chicken stock
Chicken innards
Garlic
Broth
Olive Oil
Paella seasoning (saffron, garlic, salt, paprika, cayenne, cumin)
Cast iron or dutch oven
Instructions:
Preheat the oven at 350°.
Brush the chicken with olive oil and season the chicken with salt.
Add olive oil to the cast iron and sear the chicken on both sides.
Remove the chicken when the skin is golden brown. Set aside.
Add garlic
Remove the peppers and blend them with hot water (maybe about half a cup). The consistency should be similar to a paste. Set aside.
Add garlic and chicken innards to the cast iron. Cook for about 10 minutes.
Slowly add rice. Stir until rice is covered in the flavor.
Add chicken stock until all the rice is covered.
Place the chicken on top of the rice and bake for 40-50 minutes at 350°.
Add stock to the rice every 20 minutes or so.
The chicken and rice should have a golden layer of crispiness.
The best bites will include rice, chicken skin, meat, and chicken liver.
