Salmon Stew

Ingredients

What you need:

  • Salmon

  • Potatoes

  • Carrots

  • Zucchini

  • Broth

  • Half & Half

  • Olive Oil

  • Flour

  • Seasonings: Salt, pepper, garlic powder, onion powder, paprika, Old Bay

  • Small/Medium Pot

Instructions:

  1. Chop the veggies into small cubes.

  2. Add olive oil, carrots, and potatoes to the pot. Do not add the zucchini yet. It will overcook.

  3. Season and stir for 10 minutes.

  4. Add flour and cook for 5 minutes.

  5. Pour in the broth.

  6. Add half and half. You can use milk or heavy cream. The type of cream and how much depends on how creamy you want the stew. I used a 1/2 cup of half & half because I prefer more broth.

  7. Add seasoning to taste. Cook for about 20 minutes.

  8. Remove the skin from the salmon and cut it into cubes.

  9. Add the salmon and zucchini to the pot. Cook for another 5 minutes. Turn the flame off.

  10. In a skillet, sear the salmon skin on both sides. Season with Old Bay.
