Spicy Turkey Soup
Ingredients
What you need:
Spicy Turkey Sausage
1 can of Crushed Tomatoes
Minced Garlic
Carrots
Mushrooms
Onions
Jalapeños
Kale or Spinach
Olive Oil
Seasonings: Cayenne, Smoked Paprika, Crushed Red Peppers
Pasta is optional. I used the Trader Joes Brown Rice Pasta
Instructions:
Chop vegetables: carrots, onions, mushrooms, and jalepeños.
In a pot, add olive oil and minced garlic. Cook for a minute or two.
Add vegetables and season. Cook for 3-5 minutes.
Add turkey sausage and cook until browned.
Slowly add crushed tomatoes. Stir and season. Cook for at least 20 minutes.
Pour in broth and cook for another 15 minutes.
Rinse the pasta and add to the soup.
Add spinach or kale.
Note. You have total control of the soup thickness. If you want more broth, add more. You can also add a bit of heavy cream if you want a creamier soup.
