Pesto topped w Burrata

Whole Wheat Pesto topped with Burrata

Ingredients

What you need:

  • Pasta of your choice. Delallo is my favorite brand.

  • Spinach

  • Basil

  • Walnuts or pine nuts

  • Parmesan

  • Olive Oil

  • Food Processor or Pestle

  • Butter

Instructions:

  1. Boil pasta in half water and half milk. Cook until perfectly al dente.

  2. Use a food processor or pestle to grind spinach, basil, and nuts into a paste.

  3. Add parmesan and continue processing.

  4. Slowly add olive oil. Continue until the pesto is smooth.

  5. Add salt and pepper to taste

  6. In a pan, add butter and pesto. Stir.

  7. Add the pasta from the boiling water to the warm pesto. Make sure the pasta is completely covered.

  8. Top with burrata and basil. Burrata may be a challenge to find. Mozzarella is a nice alternative.
