Fish & Grits Balls
Ingredients
What you need for the Fish & Grits Balls:
1-2 cup Cooked white Fish (Flounder, Tilapia, or Cod). Mashed or broken into small pieces.
2 cup Cooked Grits
1 egg
¼ cup Brown rice flour
Vegetable oil
Cast iron or Dutch oven
What you need for the Vinaigrette dressing:
In a bowl, combine cooked fish, egg, flour and grits.
Fold together and form into balls.
Refrigerate for an hour.
Heat oil and gently add the balls to the pan.
Cook until golden brown.
