Potato Crusted Cod

Ingredients

What you need for the salad:

  • Filleted Cod

  • 2 Large Potatoes

  • Olive Oil

  • Mayonnaise

  • Mustard

  • Grater

  • Old Bay Seasoning

Instructions:

  1. Use the grater to shred the potatoes. Use a cheese cloth or towel to squeeze all the moisture out. Set aside on dry towels.

  2. Combine 2 table spoons of mayonnaise and mustard in small bowl and mix.

  3. Spread the mayo/mustard on the cod.

  4. On one side the cod, pack on a thin layer of grated potatoes. Turn the cod over and repeat.

  5. Season the cod with Old Bay

  6. Add 2 tablespoons of oil to a frying pan.

  7. Fry the cod for 4-5 minutes on both sides or until golden brown.
