Catfish & Grits
Ingredients
What you need:
Catfish
Cornmeal
Corn Starch
Creole Seasoning
Cayenne
Canola Oil
Grits
Milk
Butter
Cream cheese
White Cheddar
Instructions:
Heat canola oil in a frying pan.
Cut the catfish and season with Creole seasoning
Add cornmeal, corn starch and seasoning to a bowl. Mix well.
Coat the catfish in the cornmeal.
Fry the catfish for 3-5 minutes.
Grits
Add 3 cups of water to a medium pot.
Add 1/2 cup of milk.
Bring the liquid to medium heat.
When hot, whisk in 1 cup of grits.
Stir constantly. You will feel the grits thicken.
Add butter and cream cheese. Keep stirring.
When the grits are done, turn the fire off, and add a little more butter and cheese. Stir well.
The grits should be smooth and creamy.
