Catfish & Grits

Ingredients

What you need:

Creole Seasoning for Catfish

  • Catfish

  • Cornmeal

  • Corn Starch

  • Creole Seasoning

  • Cayenne

  • Canola Oil

  • Grits

  • Milk

  • Butter

  • Cream cheese

  • White Cheddar

Instructions:

  1. Heat canola oil in a frying pan.

  2. Cut the catfish and season with Creole seasoning

  3. Add cornmeal, corn starch and seasoning to a bowl. Mix well.

  4. Coat the catfish in the cornmeal.

  5. Fry the catfish for 3-5 minutes.

Grits

  1. Add 3 cups of water to a medium pot.

  2. Add 1/2 cup of milk.

  3. Bring the liquid to medium heat.

  4. When hot, whisk in 1 cup of grits.

  5. Stir constantly. You will feel the grits thicken.

  6. Add butter and cream cheese. Keep stirring.

  7. When the grits are done, turn the fire off, and add a little more butter and cheese. Stir well.

  8. The grits should be smooth and creamy.

  • Chardonnay

  • Cava or Crémant

  • Muscadet
