Cheese and Broccoli Rice

Ingredients

What you need:

  • Cheese - 1 - 1.5 cups

  • Fresh or Frozen Broccoli

  • Rice

  • Cream of Chicken Soup. Feel free to use a store-bought can.

Homemade Cream of Chicken Soup

  • Chicken Broth - 2 cups

  • Butter

  • Flour

  • Warm Milk - 1 cup

  • Seasonings: Salt, Pepper, Garlic Powder, Onion Powder

Instructions:

Cream of Chicken Soup

  1. Make a roux by melting butter and adding about 1/2 cup of flour. Add seasonings.

  2. When the roux is bubbling, add a little chicken broth. Whisk constantly. keep adding chicken broth a little at a time.

  3. While whisking, add 1 cup of warm milk.

  4. The soup will become thicker as it cooks. If it’s too thick, add more broth.

  5. Be sure to taste along the way.

Cheese and Broccoli Rice

  1. Cook 1-2 cups of rice.

  2. Chop broccoli into small pieces.

  3. Shred cheese if needed

  4. In a baking dish, add broccoli, rice, and cream of chicken soup.

  5. Fold in cheese. Be sure to leave some to top the dish.

  6. Bake at 400° for 15-20 minutes until bubbly golden brown.
