Cucumber Gazpacho
Ingredients
What you need:
1-2 Cucumbers
1 Jalapeño
Roasted Garlic
Onion
Avocado
Mint (optional)
Salt & Pepper
1 tsp Lemon Juice
1 tbsp Olive Oil
Instructions:
Peel the cucumber and cut into chunks.
Chop jalapeño, onion and avocado.
Add all ingredients to a food processor or blender.
Blend until smooth.
Top with mint & red peppers & serve chilled.
