Cucumber Gazpacho

Ingredients

What you need:

  • 1-2 Cucumbers

  • 1 Jalapeño

  • Roasted Garlic

  • Onion

  • Avocado

  • Mint (optional)

  • Salt & Pepper

  • 1 tsp Lemon Juice

  • 1 tbsp Olive Oil

Instructions:

  1. Peel the cucumber and cut into chunks.

  2. Chop jalapeño, onion and avocado.

  3. Add all ingredients to a food processor or blender.

  4. Blend until smooth.

  5. Top with mint & red peppers & serve chilled.
