Mushroom Mascarpone Omelette

Ingredients

What you need:

  • 2 eggs or Liquid Egg Whites

  • Mushrooms

  • Marscapone Cheese

  • Salt & Pepper

  • Butter

  • Non-stick Pan

Instructions:

  1. In a bowl, whisk eggs and a splash of water. Whisk and set aside.

  2. Slice mushrooms and add them to a saucepan with butter, salt, and pepper.

  3. When mushrooms are tender, add a tablespoon of mascarpone cheese.

  4. Stir and cook for another few minutes.

  5. In a nonstick pan, add butter. Add the whisked eggs.

  6. Tilt the pan back & forth to distribute the eggs evenly.

  7. When the eggs are 75% done, add the mushrooms to the middle of the omelette.

  8. Gently fold the eggs over the mushrooms.
