Mushroom Mascarpone Omelette
Ingredients
What you need:
2 eggs or Liquid Egg Whites
Mushrooms
Marscapone Cheese
Salt & Pepper
Butter
Non-stick Pan
Instructions:
In a bowl, whisk eggs and a splash of water. Whisk and set aside.
Slice mushrooms and add them to a saucepan with butter, salt, and pepper.
When mushrooms are tender, add a tablespoon of mascarpone cheese.
Stir and cook for another few minutes.
In a nonstick pan, add butter. Add the whisked eggs.
Tilt the pan back & forth to distribute the eggs evenly.
When the eggs are 75% done, add the mushrooms to the middle of the omelette.
Gently fold the eggs over the mushrooms.
