Lamb & Buttermilk Grits

Ingredients

What you need:

Lamb Chops

  • Lamb Chops

  • Red Wine

  • Brown Sugar

  • Dry Ancho Chilis

  • Salt & Pepper

Buttermilk Grits

  • Instant Grits

  • Buttermilk

  • Mascarpone Cheese

  • Butter

  • Cheddar Cheese (optional)

Instructions:

  1. Season lamb chops with salt and pepper. Marinate overnight.

  2. In a crockpot add lamb, red wine, brown sugar, and ancho chilis.

  3. Slow cook for 4-5 hours.

Lamb Sauce (optional)

  1. In a saucepan, add butter and flour to make a roux.

  2. Ladle lamb broth into the pan.

  3. Whisk until the sauce thickens.

    Buttermilk Grits

  1. In a pot, add water and buttermilk.

  2. Bring to a boil and turn. the fire to low.

  3. Whisk in grits. Stir continuously.

  4. The grits will thicken. Add mascarpone cheese and butter.

  5. Keep stirring.

  6. Taste the grits, and add more water if they are still raw. Add more butter and a little salt if they are bland.

  7. When the grits are done, add cheddar cheese.

    Spoon grits into a bowl and top with a lamb chop. Pour the lamb sauce over the grits and lamb. Add herbs for garnish. For visuals, see the reel here.
