Fig Oatmeal Bars

Ingredients

What you need:

Fig Filling

  • Figs (dried or fresh)

  • Brown Sugar - 1/2 cup

  • Lime Juice - 1 tablespoon

  • Water

Crust/Topping

  • Oats (rolled or quick) - 1 1/4 cups

  • Wheat Flour - 1 cup

  • Butter - About 1 stick

  • Brown Sugar - 1/3 cup

  • 1 egg

  • Baking Powder - 1 teaspoon

  • Cinnamon - 1 teaspoon

  • Nutmeg - 1/4 teaspoon

  • Allspice - 1/4 teaspoon

  • Salt - 1/4 teaspoon

  • Walnuts (optional)

Instructions:

  1. Preheat your oven at 350°

For the Filling:

  1. Chop figs. In a small pot, combine them with 1/2 cup of brown sugar, water, and lime juice.

  2. Cook until the figs are soft. The liquid should be reduced to syrup. Set aside to cool.

Crust/Topping

  1. Melt butter and combine with 1/3 cup of brown sugar and 1 egg. Whisk until smooth.

  2. In a large bowl, combine oats, flour, baking powder, allspice, cinnamon, nutmeg, and salt.

  3. Combine the wet and dry ingredients. Fold together until everything is incorporated.

  4. Line a square baking dish with parchment paper. Pat a thin layer of crust on the bottom. Make sure you save some for the topping.

  5. Evenly spread the fig filling.

  6. Add walnuts to the topping and gently top the filling.

  7. Bake for about 30 minutes.

  8. Let cool and cut into squares.
