Fig Oatmeal Bars
Ingredients
What you need:
Fig Filling
Figs (dried or fresh)
Brown Sugar - 1/2 cup
Lime Juice - 1 tablespoon
Water
Crust/Topping
Oats (rolled or quick) - 1 1/4 cups
Wheat Flour - 1 cup
Butter - About 1 stick
Brown Sugar - 1/3 cup
1 egg
Baking Powder - 1 teaspoon
Cinnamon - 1 teaspoon
Nutmeg - 1/4 teaspoon
Allspice - 1/4 teaspoon
Salt - 1/4 teaspoon
Walnuts (optional)
Instructions:
Preheat your oven at 350°
For the Filling:
Chop figs. In a small pot, combine them with 1/2 cup of brown sugar, water, and lime juice.
Cook until the figs are soft. The liquid should be reduced to syrup. Set aside to cool.
Crust/Topping
Melt butter and combine with 1/3 cup of brown sugar and 1 egg. Whisk until smooth.
In a large bowl, combine oats, flour, baking powder, allspice, cinnamon, nutmeg, and salt.
Combine the wet and dry ingredients. Fold together until everything is incorporated.
Line a square baking dish with parchment paper. Pat a thin layer of crust on the bottom. Make sure you save some for the topping.
Evenly spread the fig filling.
Add walnuts to the topping and gently top the filling.
Bake for about 30 minutes.
Let cool and cut into squares.
