Octopus Salad

Inspired by Black Food Cookbook by Bryant Terry

Ingredients

What you need:

  • Octopus - Already cooked. Can be found at Costco.

  • Cannellini Beans

  • Pickles or cucumbers

  • Cilantro

  • Garlic

  • Lime Juice

  • Seasonings: Salt & pepper

Instructions:

  1. Rinse the octopus in water.

  2. Drain and marinate in lime juice, olive oil, salt, and pepper.

  3. Heat a cast iron and add olive oil.

  4. Sear the octopus and be sure to flip on all sides to even the char.

  5. Remove the octopus from the cast iron and set aside to cool.

  6. In a bowl, add lime juice, olive oil, chopped garlic, pickles, salt, and pepper. Whisk well.

  7. Slice the octopus and add it to the bowl. Add cilantro and beans. Mix.
