Sweet Potato Grits

Inspired by Black Food Cookbook by Bryant Terry

Ingredients

What you need:

  • Grits (any kind)

  • 1 Sweet Potato

  • Broth

  • Butter

  • Cream or milk

  • Seasonings: Salt & pepper

Instructions:

  1. Bake the sweet potato for 1 hour at 400 or air fry for 40 minutes

  2. In a pot, add 3 cups of broth and 1/2 cup of cream.

  3. Bring to a simmer.

  4. Whisk in grits.

  5. Add butter and salt.

  6. Remove the skin from the sweet potato. Use an immersion blender to remove lumps.

  7. Whisk in the sweet potato into the grits.

  8. Add more butter and broth if needed.

  9. Serve with your favorite veggie. I seared broccolini.
