Chicken Chimichurri

Ingredients

What you need:

  • Chicken Thighs

  • Cilantro

  • Garlic

  • Red wine vinegar

  • Olive Oil

  • Seasonings - Red Chili Flakes, Salt & Pepper

Instructions:

Chimichurri

Add cilantro, garlic, red wine vinegar, and seasonings to a food processor. Add about a 1/2 cup of olive oil and blend until smooth.

  1. Add some Chimichurri to chicken thighs and rub in. Let marinate for 2 hours or more.

  2. Be sure to save some Chimichurri.

  3. Grill the chicken thighs. Skin side down.

  4. Be sure to cook all the thighs all the way through. Bake or air fry for 5-10 minutes if needed.

  5. Serve over rice or mashed potatoes. Spoon the extra Chimichurri on top.

  6. I added a grilled green tomato & goat cheese for extra texture.
