Coq Au Riesling

Ingredients

What you need:

  • Chicken Thighs (with skin and bone in)

  • Mushrooms

  • Leeks

  • Riesling

  • Chicken Broth

  • Olive Oil

  • Butter

  • Garlic

Instructions:

  1. Preheat the oven at 350°.

  2. Season the chicken thighs with salt.

  3. In a cast iron or dutch oven, add olive oil.

  4. Sear the chicken thighs, skin side down first. You should see the fat starting to cook out. The skin should be golden brown.

  5. Remove the chicken and add sliced leeks and mushrooms. Cook for a few minutes.

  6. Slowly deglaze with Riesling and scrape the caramelized bits from the bottom of the pan.

  7. Add chicken broth. Cook for about 10-15 minutes.

  8. Add the chicken back to the pan and leave the skin exposed.

  9. Bake for 30-40 minutes.

  10. Serve with brown rice.
