Madeira Duck

Ingredients

What you need:

  • Whole Duck

  • Madeira Wine

  • Salt

Instructions:

  1. Preheat the oven to 300°.

  2. Set the duck on a rack to dry.

  3. Season with salt.

  4. Bake the duck for 2.5-3 hours.

  5. Baste the duck with Madeira wine, every 30 minutes.

    For the Spinach Pesto

  6. Blend spinach, almonds, parmesan cheese, lemon juice, and olive oil in a food processor. Be sure to add salt and pepper to taste.

  7. I grilled ciabatta bread, added a layer of pesto, and sliced duck.
