Madeira Duck
Ingredients
What you need:
Whole Duck
Madeira Wine
Salt
Instructions:
Preheat the oven to 300°.
Set the duck on a rack to dry.
Season with salt.
Bake the duck for 2.5-3 hours.
Baste the duck with Madeira wine, every 30 minutes.
For the Spinach Pesto
Blend spinach, almonds, parmesan cheese, lemon juice, and olive oil in a food processor. Be sure to add salt and pepper to taste.
I grilled ciabatta bread, added a layer of pesto, and sliced duck.
