Gumbo & Oxlee Graham
Ingredients
What you need:
Shrimp
Cooked Shredded Chicken or Duck meat
Sausage
Chopped Holy Trinity (Peppers, Onions, Celery)
2 Chopped Jalapenos
Butter
Flour
Broth
Rice
Seasoning: Salt, Pepper, Cajun Seasoning
Instructions:
In a large pot, cook the sliced sausage until golden brown. Remove from pot.
Make a roux in the large pot by combining 1/2 cup of flour with 1/2 cup of butter. The consistency should be silky. Be sure to keep any sausage bits and flavor. Keep stirring until the color goes from vanilla to chocolate. This may take up to 30-40 minutes.
Add the Holy Trinity to the roux and season with cajun seasoning. Fold together.
Slowly add warm broth to the pot. Season, stir and let cook for at least 20 minutes.
Add the chicken/duck.
Season to taste.
The consistency should be a little heavier than soup.
Add shrimp.
Serve hot with a cup of rice.
