McGriddle & Muscadet

Ingredients

What you need:

  • 1/2 cup almond flour

  • 1/2 cup rice flour 

    Feel free to use regular flour if you don’t like the gluten-free option.

  • 1/2 cup of oat milk cream

  • 1 tbsp of baking powder

  • 1 egg

  • 1/4 cup of brown sugar 

  • Bacon. I user Maple Turkey Bacon

  • Cinnamon

  • Instructions:

  1. Whisk all ingredients until smooth.

  2. Heat a cast iron skillet or non-stick pan over medium heat. 

  3. Melt a little coconut oil 

  4. Spray a large cookie cutter with cooking spray and place in the skillet. 

  5. Pour pancake batter into the cookie cutter.

  6. When the batter starts to bubble, flip the pancake with the cookie cutter. 

  7. Remove when golden brown. 

    Note: these pancakes are lighter so they dont take as long to cook. 

  8. Cook an egg in a cookie cutter. 

  9. Layer cheese and bacon. 

  10. Build your gluten-free McGriddle and enjoy with refreshing Muscadet wine.
