Lamb Ribs

Ingredients

  • Lamb Ribs

  • Seasoning: Salt, Pepper, Garlic Powder, Smoked Paprika, Cumin

    • Adobo Sauce (optional)

      • Dried Chipotle Peppers 

      • Brown Sugar

      • Chili Powder

      • Cumin

      • Smoked Paprika 

      • Salt & pepper 

      • Tomato Paste or 2 Roma Tomatoes 

Instructions:

  1. Make adobo sauce by boiling water and adding all ingredients to a blender.

  2. Lamb's ribs hold quite a bit of fat. Cut some fat off the top of the ribs.

  3. Massage the adobo sauce into the ribs. Season well.

  4. Marinate overnight.

  5. Cover and bake at 275° for 5 hours.

  6. For a crispy crust, uncover for the last hour.
