Lemon Pepper Wings & Aligoté
Ingredients
What you need:
Wings or Wingettes
Shrimp
Lemons
Butter
Black Pepper
Salt
Eggs
Milk
Lemon Pepper Sauce: Lemon Zest, Lemon Juice, Butter, Salt & Black Pepper
Instructions:
Create a brine for the chicken wings. Combine lemon slices, salt, water in a large bowl or pot. Keep in the refrigerator for at least 4 hours.
Remove the chicken from the brine, season, and let dry for 1 hour.
Create a dredging station with 2 beaten eggs, hot sauce and a little milk in one bowl and in another bowl add seasoned flour and cornstarch.
Dredge the chicken in flour first, then the egg mix and then back into the flour. Let sit for 15 minutes in the refrigerator.
Heat the oil to 375 degrees.
Fry the chicken until golden brown and cooked through.
In a small pan, add lemon zest, melted butter, black pepper and salt. Whisk together and pour over hot chicken.
Repeat the same steps for the fried shrimp.
