Shrimp & Grits

Ingredients

What you need:

  • Shrimp with heads or tails or both

    ◦ Onion, Celery, Green Peppers, Jalapeno

    ◦ Grits

    • ◦ Butter 

      ◦ Flour

      ◦ Buttermilk

      ◦ Cheddar Cheese 

Instructions:

  1. Peel the shrimp and set the tails & heads aside 

    Seafood Stock:

    ◦ Add shrimp shells, onion, and celery to a pot with water and salt.

    ◦ Bring to a boil and cook for at least 40 minutes 

  2. Chop the onion, green pepper, celery & jalapeño. Set aside.  

  3. Make a roux with butter & flour 

    Slowly stir the roux every 5-10 minutes until the color of chocolate. 

  4. Add the peppers, onion& celery, and cook for 10 minutes.

  5. Slowly add the stock. I like using a broth separator. (pictured)

  6. Stir gently. Cook for 15 - 20 minutes 

  7. Add shrimp & cook for another 5 minutes 

    Grits

  8. Add shrimp broth to a pot with buttermilk and salt. 

  9. Whisk in grits. 

  10. Cook for the required time. I used quick grits so about 10 minutes. 

  11. Add butter and keep whisking. 

  12. Turn the heat off and a little more butter and cheese.

  13. Grits should be creamy.

  14. In a bowl, add grits. Ladle in shrimp over grits.
